Periodically I like to switch things up with my dinners, and find something new that my family will enjoy. Something I need to start doing more often. A customer at my work was asking me where she could find the corn chips, and we started talking, she told me she was making Taco Soup and they were a perfect addition. I looked up a Taco Soup recipe and came across one on delish.com, but I often like to make the recipe my own, and use items I know myself, and my son will like. You can find the original recipe here.
I hate cutting onions, like I REALLY hate cutting onions. My eyes burn and water to the point I cannot open my eyes, so I skipped the onion. I also left out the pinto beans.
I used 1 pack of ground beef, 1 and a half cups of frozen corn, 1 540ML can of cracked black pepper and roasted garlic tomatoes, 1 whole pack of taco seasoning (24g) and about a teaspoon of extra virgin olive oil (only oil I use in my house). This recipe is truly incredibly easy, and extremely quick.
Cook up your ground beef till there is no pink, add your can of tomatoes, corn and taco seasoning. Add 1 and a half cups of water (I used closer to 2) and bring to a boil, then simmer about 15 to 20 minutes.
In the actual recipe it calls to garnish with sour cream and green onions, but I wanted to add a bit more, and have it taste like more of a taco. I added Chipotle and Cheddar Tortilla strips first, and let them soak in a bit. Then I shredded some cheddar cheese (or whatever cheese you prefer), sprinkled some green onions on top, then put a blob of sour cream! I mixed it all together and it was absolutely D.E.L.I.C.I.O.U.S… My son loved it, I loved it, it will definitely be added into our dinner rotation!
